Vinification | At the end of the manual harvest, the ripest and healthiest bunches are left to dry for two months, in order to concentrate sugars and aromas. De-stemming and slow fermentation follow at a temperature of 25° C with a maceration on the skins for 10 days and periodic punching down. Before bottling, the wine ages for a few months in wooden barrels. |
